The origin of the word pulse is from the Latin word puls meaning thick mush or porridge traditionally made with dried vegetables. Pulses are edible seeds from annual leguminous crops that include chick peas, beans, peas and lentils harvested dried. Soybeans, nuts and crops that produce oil are not considered pulse crops. Neither are any crops that are harvested while they are still green, like green beans, for example.
